Pancakes have long been a breakfast favorite, but these delicious hearty pancakes bursting with raisins and a touch of citrus need little more than a dab of butter or whipped cream as a topping.
Make your own hearty multi-grain pancake mix to have on hand for a quick and easy meal, (pancakes aren’t just for breakfast!)
This recipe contains buttermilk powder, which is something that we usually keep on hand for baking. It ensures the pancakes are flavorful and light.
Did you know that there are a couple tricks to making perfect pancakes? First, ensure that your griddle is good and hot, melt a dab of butter and once it’s sizzling, pour the batter in ONE Spot, it will spread evenly on it’s own.
Don’t attempt to turn or flip the pancake until little bubbles form over the surface, then flip it one single time only. Never flip it a second time or the pancakes will become tough or leathery in texture.
You’ll Need:
1 c. instant oats, (ground into oat flour, click here for directions)
2 c. all-purpose flour
1 1/2 c. whole wheat flour
1 c. dried buttermilk powder
1/3 c. sugar
3 T. baking powder
1 T. baking soda
1 tsp. dried orange peel
1 c. raisins
1 c. sliced almonds — toasted
Combine all ingredients in Jar (in Layers) Or vacuum seal bag.
Attach a Tag: To Make Hearty Pancakes
1 Jar Hearty Pancake Mix
1 2/3 cups water
1 egg
3 T. vegetable oil
Combine the above, mix well, Batter will be slightly lumpy.
Cook on lightly greased griddle or skillet.
