These mile-high almond pancakes are perfect for gift-giving or sharing with friends and family. This from-scratch almond pancake convenience mix can be made ahead of time up to 4 months in advance and stored in the pantry until needed.
You’ll Need:
1 c. whole wheat flour
3 c. all purpose flour
1 c. finely ground almonds
4 c. milk, nonfat, dry
1/2 c. sugar
1 Tbsp salt
3/4 c. baking powder
In a large bowl, stir all ingredients together until well blended. Store in a resealable plastic bag.
Yield: about 10 cups pancake mix, enough for 4 batches of pancakes.
To make pancakes:
In a medium bowl, combine 2 1/2 cups pancake mix, 1 1/4 cups water, 1 egg, and 2 tablespoons vegetable oil.
Stir just until moistened.
Heat a greased griddle over medium heat. For each pancake, pour about 1/4 cup batter onto griddle and cook until top of pancake is full of bubbles and underside is golden brown.
Turn with a spatula and cook until remaining side is golden brown. Re-grease griddle as necessary.
Yield: about 1 dozen 5-inch pancakes

3/4 c baking soda obviously isn’t correct. What should it be?
the correct ingredient is 3/4 cup Baking POWDER
i have stumbled upon these recipes years after everyone else it seems…
3/4 cup baking powder is not correct either. It is not the ingredient that I think is wrong but the amount. Neither baking soda or baking powder should need that much in any small recipe, I’m thinking closer to 2 tsp.

The amount of baking powder in the recipe is indeed correct, that is a big reason why the pancakes rise so high.
I own the book, and made this recipe about 20 years ago. I believe there was a proofreading error that was never caught. I made them according to the recipe and they bubbled up so much they always fell apart when trying to flip them. I adjusted the recipe by cutting the amount of baking powder by at least half to get them to finally work.
Haha seems soooo wrong! Please, if anyone tries this, please post how they turned out. Never ever seen a recipe like it!

Really? It’s actually pretty common to use 2-3 Tablespoons of Baking powder in pancake recipes. Nigella uses it in her homemade pancake mix too.

Not gonna lie, I was kind of worried when I saw that this recipe called for 3/4 cup of baking powder because I thought to myself, that’s a phuck-ton of leavening!!!
However, I was very pleasantly surprised to have the absolute most delicious almond pancakes I’ve ever tried, so, I stand corrected Budget101!
