Yucatan Chili Spice Mix
1 tablespoon ground cumin
1 teaspoon ground coriander
1 teaspoon cayenne pepper
2 cloves garlic, crushed
1 square bitter chocolate
1 tablespoon granulated sugar
Salt
Pepper
Makes enough for a single pot of chili using 1 lb ground beef.

- Measure the cumin, coriander, cayenne, and sugar into a small bowl.
- Crush the garlic cloves well.
- Finely chop or grate the bitter chocolate square.
- Stir in the garlic, chocolate, salt, and pepper until evenly combined.
- Use the mix to season 1 pound of ground beef for one pot of chili.
Recipe Size Alteration
💡 If you altered the ingredients above by doubling or tripling the recipe, you may also need to change the pan/dish size and adjust the cook time.
Notes
Prep time is an estimate based on measuring the spices, crushing the garlic, and chopping the chocolate.
For a shelf-stable dry mix, leave out the fresh garlic and add about 1/2 teaspoon garlic powder during cooking.
If mixed with fresh garlic, refrigerate and use within 24 hours.
Prepared chili made with this seasoning should be refrigerated within 2 hours and used within 3 to 4 days.

I really like the idea of using this spice mix in my cooking. I’m not sure what to do with it exactly, but I think that’s part of the fun! It sounds like a lot more than just chili powder and cumin – there’s cinnamon, oregano, thyme, cloves and allspice too. Sounds delicious!
