This chicken fajita seasoning mix is our go-to seasoning for perfect authentic fajitas every time!
There are several reasons for creating your own homemade seasoning mix aside from the fact that homemade mixes are considerably cheaper than their store-bought counterparts. I love being able to control the amount of sodium in recipes, plus avoid suspected hormone disrupting chemicals such as msg (Monosodium glutamate).
Chicken Fajita Seasoning Mix
You’ll Need:
1 tablespoon corn starch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken boullion cube
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
Combine the ingredients in a bowl, mixing well, then transfer to a spice jar. This makes 3 1/2 tablespoons (or enough to season 3 pounds of poultry).
Use 1 slightly rounded tablespoon per pound of meat for seasoning.
To Use Seasoning Mix:
In a bowl, marinating dish or gallon size ziplock bag combine 1 pound of sliced chicken breast, 2 Tbs olive oil, and 1 slightly rounded tablespoon of chicken fajita seasoning mix. Stir to coat, let it rest while preparing the veggies.
Cut 1 large onion, 1 large red bell pepper, and 1 large green bell pepper into thin strips. Heat a drizzle of olive oil in a large, heavy skillet over medium-high heat, add the onions and peppers, saute until crisp-tender. Remove and keep warm.
Add the seasoned chicken strips to the skillet, cooking 5-6 minutes until browned. Return the sauteed peppers and onions to the pan, stir to evenly season.
Serve with warm tortillas, guacamole, cheese, and sour cream, if desired.
Controlling the Ingredients
In lieu of recent commentary on the recipe, I thought I’d clarify a few points about the ingredients.
In order to control the sodium and MSG, you’ll need to pay attention to the ingredients and brands that you choose to use in your homemade chicken fajita seasoning mix. If you want to lower the sodium, choose a sodium-free chicken boullion, such as Herb-Ox. You might also wish to replace the one teaspoon of salt in the recipe with a salt replacement of your choice.
If you want to avoid MSG, use a brand of boullion that does not contain monosodium glutamate, such as Knorr selects chicken boullion. That’s the best part about making recipes from scratch, you can control the ingredients or substitute for items that suit your own dietary needs and desires.
