Cajun Blackened Spice Mix
1 T Paprika
2 1/2 T Salt
1 T Onion powder
1 T Garlic powder
1 T Cayenne pepper
3/4 T White pepper
3/4 T Black pepper
1/2 T Thyme
1/2 T Oregano
1/4 T Sage
Combine dry spices and seal in ziploc or vacuum seal bag (or jar). Measure all into a ziploc bag, seal & shake to combine. Pour into a spice jar or bottle. Makes a Lovely Gift.

I made and used this just this evening for blackened catfish. For me, the over all flavor was very good but maybe a little too salty. I will definitely use this again but cut down the salt by 1/2 to 1 T.
For my dad it was a little too spicy. The heat hit the back of the throat but didn’t linger.
