Balti Masala Spice Mix

4 tablespoons Coriander seeds
2 tablespoons White cumin seeds
2 pieces Cassia bark — (2 inch)
1 teaspoon Fennel seeds
2 teaspoons Black mustard seeds
4 Cloves
1/2 teaspoon Wild onion seeds
1/2 teaspoon Fenugreek seeds
1 teaspoon Dry fenugreek leaves
10 Dry curry leaves
1 teaspoon Green cardamom seeds
1/2 teaspoon Lovage seeds.

Measure all into a ziploc bag, seal & shake to combine. Pour into a spice jar or bottle. Makes a Lovely Gift.

  1. Add one heaping tablespoon of balti masala spice mix and just enough water to form a thick paste, add a little water or stock to cover and simmer until the meat, seafood or vegetables are cooked through.

    I use a tablespoon of seasoning per person eating, about 200 grams of meat for weight measurement.

  2. I make a Balti sauce with this Balti Masala spice mix.
    Balti sauce is made with garlic, onions, turmeric and garam masala, among other spices. Balti gosht is eaten in Pakistan, North India, and other places around the world, including Great Britain.
