Potato chip cookies are a delicious way to use the crushed or stale bits of chips that are left and create the most unusually delicious cookie!
This recipe was adapted from one of my grandma’s recipes, she never really liked the idea of wasting anything. Crunchy, chewy, buttery, salty, sweet… they really satisfy whatever your tastebuds are craving!
Perfect for slightly stale chips! If your chips are very stale, you can crisp them in the oven on a cookie sheet for 3-5 minutes before adding them to the recipe.
You’ll Need:
1 cup white sugar
1 1/2 cups crushed potato chips
2/3 cup chopped pecans
2 1/2 cups all-purpose flour
1 teaspoon baking powder
Measure each item into layers if giving as a jar gift, cone gift, etc, or measure into a large ziploc bag or vacuum seal bag & seal.
(Recipe fits in a 1 Quart Jar)
Recipe Tag Directions:
Combine the following until well blended:
1 Pkg Mix (as listed above)
2 sticks butter, softened
1 teaspoon vanilla.
Shape into balls the size of walnuts. Flatten with fork dipped in sugar
Bake at 350 degrees F (175 degrees C) for 14 to 18 minutes until edges are very lightly browned.
Makes 2 1/2 dozen cookies.
