Pumpkin Muffin Mix
Use A-B-C Muffin Mix Base
4 eggs
3 tsp. vanilla
1 cup oil
2 cup Water
5 1/2 cups muffin mix
2 cups or 1 can solid pack pumpkin
1 Tb. pumpkin pie spice
1/2 cup chopped nuts
1/2 cup chopped raisins
The batter should be slightly lumpy.
Fill muffin tins 3/4 full. Bake for 18 to 20 minutes, or until muffins are golden brown.
Muffins freeze well.
To reheat frozen muffins, microwave on high for 30 seconds per muffin.
Makes 24 Regular size muffins, or 12 Extra Large

- Preheat the oven to 375°F and line or grease 24 regular muffin cups, or 12 extra-large muffin cups.
- In a large mixing bowl, combine the eggs, vanilla, oil, water, A-B-C Muffin Mix base, pumpkin puree, and pumpkin pie spice.
- Stir just until combined. The batter should be slightly lumpy.
- Fold in the chopped nuts and chopped raisins.
- Fill muffin tins 3/4 full.
- Bake for 18 to 20 minutes, or until muffins are golden brown and a toothpick inserted near the center comes out clean.
- Cool for 5 minutes in the pan, then transfer to a wire rack.

💡 If you altered the ingredients above by doubling or tripling the recipe, you may also need to change the pan/dish size and adjust the cook time.
Notes
If using a 15-ounce can of pure pumpkin, you will have about 1 3/4 cups rather than a full 2 cups.
Store cooled muffins in an airtight container at room temperature up to 2 days, refrigerate up to 4 days, or freeze up to 3 months for best quality.
Reheat frozen muffins in the microwave on high for 30 seconds per muffin.
Dry A-B-C Muffin Mix shelf life is estimated at up to 6 months in an airtight container stored in a cool, dry place.
