3 Grain Muffin Mix

Make your own make ahead 3-grain muffin mix to create quick and tender healthy muffins in minutes. This reliable family favorite is perfect for throwing together a batch of fresh delicious muffins during the busy workweek.

The wonderful part about this recipe is that it creates enough homemade 3 grain muffin mix to make 4 large batches of muffins.

You’ll Need:
5 cups Whole Wheat Flour
2 cups Oat Bran or Quick Oats
5 cups Unbleached Flour
3 tsp. Cinnamon
1 tsp. Nutmeg
6 tsp. Baking Powder
2 tsp. Baking Soda

In a large bowl combine all of the ingredients together, mixing well to ensure the ingredients are completely incorporated. Divide the mixture into 4 mason jars, zip-close bags or vacuum seal bags, (3 cups of mix per package).

Attach Tag:
3 cups Basic 3 grain Muffin Mix (See Recipe Above)
1/2 cup Oil
1/2 c. Sweetener (Honey or Maple Syrup)
1 cup Fruit or Vegetable Puree (Pineapple, Apple, Carrot, Zucchini, Sweet Potato, Banana, Berries or Apple Sauce)
1/2 to 1 cup Milk
1 to 2 Egg(s)
1/2 to 1 cup Nuts, Raisins, Seeds or other Dried Fruit

Combine all ingredients. Do not overmix. Transfer into lightly greased muffin tins and then Bake at 350 degrees for 20-25 minutes.

  3. any type of muffin mix can be made up completely and placed in a small tub then into the refrigerator. the secret to fluffy muffin is to just bare mix it, to just barely mix to moisten only. this pre-made mixture will keep about ten days refrigerated.

    i’ll look up my old recipie on how to make a fermented batter that will last indefinitely, well about a month before needing to refreshen it. this batter is fermented and has no alcohol in it. been a while since i made it…..;)
