Create your own simple stuffed strawberry Santas! These adorable bites of deliciousness are perfect for holiday parties.
Throughout the holiday season, all of those desserts can really add up, so this one is one of favorites, considerably lower in calories than cookies, candies or pies, yet offer that lovely sweetness of fresh berries and a delicious cream frosting – so go ahead, have another!
1 1/2 pounds strawberries
2/3 cup powdered sugar
8 oz mascarpone cheese
3 TBS semisweet mini chocolate chips
1/2 teaspoon pure vanilla extract
Wash the berries and cut across the top, removing the stem and leaves, creating a flat base. Using a sharp paring knife, trim the pointy nose of the berries, setting them aside.
In a medium bowl combine the Marscapone cheese and vanilla, beating well, add in the powdered sugar, beating until smooth.
Spoon the frosting into a piping bag that has been fitted with a star shaped tip. If you don’t happen to have piping bags, you can use a basic plastic ziploc baggie as well, here are the directions for that!
Place the larger fat bottoms of the strawberries on a plate, creating Santa’s Butt, top with the cream frosting, add the tip of the strawberry to create his hat and a dollop on top for the pompom. Also add a tiny dollop to the front for a button. Use the mini chocolate chips for eyes.
