July 31 is National raspberry cake day! Raspberries are one of the coolest fruits, they are actually made up of a bunch little drupelets and can be red, black, purple or golden in color.

While this is an unofficial official holiday, we here at Budget101 are going to celebrate it anyway.

Any excuse to enjoy good food is good enough for me. Fortunately for all, this wonderful dessert has 2 separate days, July 19th and July 31st.

Raspberries can be found all over the world and are mentioned in several popular myths. One says that raspberries used to be white until a nymph cut her finger and bled on them turning them all red.

In Germany, raspberries were used to tame “bewitched” horses by tying a raspberry twig onto the horse’s body in hopes that it would calm them and the most recent say that foxes are red because they ate so many raspberries.

It is no wonder that we started adding these amazing little fruits to our desserts.

How to Make Raspberry Cake

To make Raspberry cake all you need is:
1 Homemade cake mix (or a white cake mix)
1 3oz package raspberry gelatin (such as Jello)
4 eggs
1/2 cup canola oil
1/4 cup hot water
10 oz of raspberries ( if using frozen thaw & leave un-drained)

Directions

Pre-heat oven to 350°F

Combine all of the ingredients in the bowl except for the raspberries, mix everything together until it is well blended. Fold in the raspberries. Pour it into a greased 13X9 pan and put it into the oven for about 37 min.

When the cake is done let it cool on a cooling rack.

If you want to add frosting you can take one- 12 oz package of whipped topping and fold in 1 cup of raspberries.

Once the cake is cool you can spread this over the top for a light fluffy raspberry cake.
