Peppermint Bark Popcorn

A taste of the holidays like never before! This tantalizingly sweet treat makes a lovely gift if you keep your hands off it long enough to give some away!

You’ll need:
1 pkg White Chocolate Chips (12 oz)
3/4 tsp peppermint extract
12-14 c. Air Popped Popcorn (about 2 bags of microwave popcorn)
4 Candy Canes, pulverized

Crush the candy canes into fairly small particles, set aside in a small bowl. Spread the popcorn out in a large pan. In a medium microwave-safe bowl, melt the white chocolate chips (about 1 1/2 minutes in the microwave), be careful not to overheat the chocolate! Add the peppermint extract to the melted chocolate, mixing well.

Sprinkle the crushed peppermint sticks over the popped popcorn.

Carefully pour the melted chocolate over the peppermint popcorn, Then mix well to coat.

Set aside for 15-20 minutes to let the mixture fully harden. Break the bark into pieces and enjoy!
