This Harry Potter Butterbeer popcorn was inspired by my kid’s favorite book series, and we created it to enjoy during a delightful Harry Potter movie marathon!
How to Make Butterbeer Popcorn
Pop popcorn using your favorite method and place it in a large heat-safe bowl. The easiest way to pop popcorn quickly is by using our MYO microwave popcorn recipe.
Measure out the butterscotch chips and set them aside until needed.
Line a baking sheet with a Silpat or foil and set aside until needed. In a heavy bottom saucepan bring corn syrup, brown sugar, and butter to a rolling boil.
Boil the mixture over medium heat for exactly 2 minutes. Remove from heat and add extracts, butterscotch chips, salt, and baking soda. Stir until blended and smooth.
Pour mixture over popcorn and stir to coat all of the popcorn.
It actually helps to have half of the popcorn in another bowl and add half of the butterbeer caramel toffee over half of the popcorn),
then add the remaining popcorn, stirring well to coat it all.
Spread the coated popcorn onto the prepared cookie sheet.
In a microwave safe coffee mug, melt the white chocolate chips, stirring to remove any lumps, then drizzle over the butterbeer popcorn mixture.
Sprinkle the popcorn with edible glitter gold stars and dehydrated marshmallows, both of which are entirely optional!
Humidity will cause the popcorn to become soggy, so be sure to seal it in an airtight container as soon as it’s cool.
Harry Potter Butterbeer Popcorn
You’ll Need:
10-12 cups popped popcorn
1 cup light corn syrup
1/2 cup brown sugar
1/4 cup butter
1 tsp butter extract
1 tsp vanilla extract
1/2 tsp baking soda
1/4 tsp salt
1/2 package butterscotch chips about 1/2 cup to 3/4 cup
1/4 cup white chocolate chips
1/2 c. dehydrated marshmallows
2 Tbs edible glitter gold stars

- Boil exactly 2 minutes.
- Remove from heat and add extracts, butterscotch chips, salt, and baking soda. Stir until blended and smooth.
- Pour mixture over popcorn and stir to coat all of the popcorn.
- Melt white chocolate chips and drizzle over the butterbeer popcorn mixture.
- Sprinkle the popcorn with edible glitter gold stars and dehydrated marshmallows, both of which are entirely optional!
