I've lost six pounds!

So I am doing the south beach thing, and it's been going well. I am trying to get used to eating all these veggies, which I never used to, but it's going well, and I lost six pounds so far! So that's encouraging! )

My goal is to lose twenty. Now, I have to lose more than that total, but I thought twenty would be a nice goal to set for myself at first.

It's hard for me to NOT weigh myself every morning. I am getting better. I weigh every few days. There's no way I can wait a whole week to weigh myself, so that's not happening. But I am getting better. )

    Congratulations! One of my favorite "South Beach Diet" recipes is to take a head of cauliflower, steam it and while that is cooking, cook up a pound of ground beef (or ground turkey) mix in a packet of taco seasoning, without the water, a can of undrained chopped tomatoes, and let simmer a couple minutes. Sprinkle on some shredded cheddar cheese or Monterey jack, whatever, then serve the Taco Meat over steamed cauliflower. It is SOOOO good and fits within the guidelines of SB diet.
