Day 3: Canning Bonanza

Today is day 3 of another Canning Bonanza! A few days ago I had the opportunity to get to the Farmers market early in the day, when the bounty was still high and the prices, still low. I was able to buy 50 lbs of tomatoes (2 boxes) for a total of $14. and a bushel of pickling cukes for $12.
I had thought my canning had come to an end for the season. However, I was mistaken. Since I had already made more than 25 jars of Salsa, 25 or so jars of canned tomatoes, as well as numerous types of pickles, I decided to utilize this batch for unnecessary, yet yummy recipes.
I made a double batch of homemade bone suckin' good BBQ sauce, Faux Raspberry Jam and Faux Blackberry Jam.
Today I am tackling an Italian Sauce that will be used later on in Lasagne, Spaghetti, meatball subs, chicken parmesan, eggplant parmesan, etc.
So much for a vacation this week!
