Crock Pot applesauce and vegetable pot pie

Two recipes I'm making today that I thought I'd share with you.
Crock Pot Applesauce (great cure for a cookie hangover)
8 skinned, cored, and cut up apples
lemon juice (1/8th to 1/4 cup, based on taste)
1 tsp vanilla
1/4 cup brown sugar
generous sprinkling of cinnamon
1/8th cup to 1/4 cup of water
Dump it all in. Set it to low and cook for 6 hours, or till mushy. Mash with potato masher and serve.
Vegetable Pot Pie
crust recipe for a double-crust pie
1 cup cooked diced potato
1/2 cup each: corn, peas, carrots, celery
1/2 cup diced onion
3 cloves minced garlic
1/4 cup flour
1 1/2 cups broth
seasonings to taste (I use salt, pepper, thyme)
Lay down bottom crust. Cover with veggies. Bring broth (save 1/2 cup) to simmer. Combine remaining broth and flour and seasonings. Add slowly to simmering broth. Make a gravy. Pour over veggies. Top with crust. Prick top. Bake at 400 for about 1/2 an hour.
