Changing my diet

Well the wife has decided that I'm too overweight and not getting enough fiber in my diet. She also has me eating more fish and less "red" meats. Which also happens to be my favorite food.
I am also eating more fruit and the Philippines has plenty of that. At the Hypermart I can get pineapple, guavas, papayas, kiwi, dragon fruit, mangos, bananas , apples, oranges etc., etc. I love fresh fruit with my cornflakes or oatmeal now. First time I have eaten these in 40 years. My normal breakfast was home cured bacon, homemade sausage, eggs and toast.
In addition to this is salads. I now eat a healthy green salad for lunch every day. I have found I really enjoy concocting my own salads in bulk, having them on hand in the fridge. I also have been experimenting on making my own dressings.
Which has given me a problem. I love ranch dressing but my attempt to make it has left me with a runny, not very flavorful concoction. Buttermilk is non existent here so I had to use powdered buttermilk. Did I use the wrong proportions of water to powder? I used 1/3 cup powder to 1 cup water. I have also found other recipes online that call for plain yogurt, but I'm trying to keep cost down, as yogurt is expensive here.
So if there is anyone out there that can help me save this.... this.... I don't know what to call it, I would sure appreciate your help.
