Grinch dip will leave you feeling anything BUT grinchy! This delectable Whoville style treat is a hearty blend of artichoke hearts, spinach, cream cheese, Parmesan cheese and seasonings all together in a cheesy, full flavor dish you’ll love time and again!
When I found out the kids were cramming for finals in their dorm and wanted some holiday-themed munchies, I threw this dish together in just a few minutes’ time, it was a HIT!
How to Make Holiday Grinch Dip
The original recipe makes a hearty 9″x9″ pan, perfect for a family of four to six. The best part about this dip is that it freezes very well, and also doubles or triples well. If you are so inclined, you can make several and freeze them for a quick appetizer that is ready to bake and serve!
Drain the artichoke hearts thoroughly, then chop them coarsely, set aside.
In a large mixing bowl combine the cream cheese and mayonnaise together. Do not be tempted to use Miracle Whip, it imparts a sicky sweet flavor that will likely not be enjoyable. As you can see from the photos, if I am using my Kitchenaid mixer, I don’t even bother to cream the ingredients first.
Add the Parmesan and Romano cheeses to the mixture.
Add the fresh minced garlic, if using; and salt.
Add the remaining seasonings, you can add torn fresh basil if you happen to have some on hand. Luckily my plants are doing well this year and I’ve got an abundance growing in the kitchen.
Add the (well-drained!) artichoke hearts and coarsey chopped spinach, folding into the seasoned cream cheese mixture.
Prepare a baking dish by spraying it with nonstick spray or mist with olive oil. Then transfer the dip mixture into the dish, spreading it around evenly.
Top generously with shredded mozzarella cheese. If you want to add a bit of festive flair, you could top with a tablespoon or two of finely minced red bell pepper to adorn a bit of color!
Bake at 350ºF for 20-25 minutes or until bubbly and golden brown, serve with tortilla chips.

For a 9×9 Pan, You’ll Need:
1 cup chopped artichoke hearts (canned- well-drained or frozen & thawed & well-drained)
1 cup frozen chopped spinach, thawed, well-drained
8 oz. cream cheese, room temperature
1/4 c. Regular Mayonnaise
1/2 cup grated Parmesan cheese
1/4 c. grated Romano cheese
1 tsp Minced Garlic
1/4 c. Mozzarella Cheese
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/2 tsp dried basil
dash black pepper
In a large mixing bowl combine the cream cheese and mayonnaise, creaming them together until smooth. Add the Parmesan, Romano, garlic, basil, red pepper flakes, salt, garlic powder, salt mixing well. Add the (well-drained!) artichoke hearts and spinach, folding into the seasoned cream cheese mixture.
Spray a 9×9 baking pan with nonstick spray or olive oil, fill with the dip mixture and top generously with mozzarella.
Bake at 350 for 20-25 minutes or until bubbly and golden brown, serve with tortilla chips.
Serve hot with crackers, chips, or toasted pitas for dipping.
How to Make the Grinch Labels
The labels were created by printing a small graphic of the Grinch on a piece of green cardstock, that’s literally it! It took maybe 3 minutes to throw together.

If you altered the ingedients above by doubling or tripling the recipe, you may also need to change the pan/dish size and adjust the cooking/baking time.
One of my favorite things about the holidays is all the special food. I love trying new recipes and this Holiday Grinch Dip is definitely a keeper!
