Spicy Parmesan Zucchini Fries

If you’re blessed with an abundance of zucchini, make these awesome spicy parmesan zucchini fries, your tastebuds will thank you!
Zucchini is a very inexpensive vegetable during the summer months that offers lots of flavor and some great options for delicious side dishes the entire family will love. We frequently pair it with grilled meat, chicken or fish and sometimes just as an evening munchie when it’s too hot to eat a full dinner.

Spicy Parmesan Zucchini Fries

You’ll Need:
3 zucchini
1/4 cup parmesan cheese, grated
1 pkt seasoned coating mix (like Shake n’ Bake) (or keto shake-n-bake)
1 egg
1/2 cup lite ranch dressing

Heat oven to 450º.

Cut zucchini crosswise in half, then cut each piece into 1/4-inch-thick match-like sticks. Add cheese to coating mix in shaker bag. Shake gently to combine. Whisk egg in a medium bowl.

Add zucchini, in batches, to the beaten egg. Toss until evenly coated.

Use tongs to add 1/4 of the zucchini to coating mix in shaker bag. Close bag, then shake to evenly coat zucchini. Spread onto the rimmed baking sheet sprayed with cooking spray. Repeat with the remaining zucchini.

Bake 12 to 13 min or until golden brown, turning after 7 min. Serve with dressing. Serves 8

OR

2 lg Zucchini cut into matchsticks
2 eggs, beaten
3/4 c. Panko
3/4 c. Parmesan Cheese, grated
2 Tbs. flour
3/4 tsp salt
1/2 tsp Black Pepper, freshly ground
1/2 tsp Chili Powder
1/4 tsp Paprika

Combine all the dry ingredients together in a zip-close style bag, seal and shake to combine. Dip the cut zucchini pieces in egg
and drop into the seasoning bag, seal and shake to coat. Place them on an oven safe baking sheet that has been coated with aluminum foil and lightly sprayed with non-stick spray. Spritz with olive oil (we use a Misto for this).

Bake as directed above. Alternatively, these can be deep fried if you prefer.
