How to Make Ben & Jerry’s Kiwi Ice Cream
The easiest way to peel a kiwi is to slice one end off and scoop out the fruit with a spoon.
Peel and mash the kiwis in a bowl until they’re pureed (or pulpy, depending on the texture you prefer). Add two tablespoons of sugar to the fruit and put it in the fridge.
Using a stand mixer, whisk the eggs until light and fluffy, about 2 minutes.
Add the sugar gradually, whisking until completely blended, about 1 minute more. Pour in the cream and whisk until incorporated. Then transfer the mixture to your favorite ice cream machine.
Once the ice cream starts taking shape, stir in the sugared kiwis. (Follow the manufacturer’s directions for your machine).
If the kiwis are super pureed, it will be smoother.
Ben & Jerry’s Kiwi Ice Cream
You’ll Need:
6 Ripe kiwis
1 cup Sugar
1 Tbsp Sugar
2 large Eggs
2 cup Heavy or whipping cream
Peel and mash the kiwis until they are pureed.
Stir 2 tablespoons of sugar into the fruit and refrigerate for an hour.
In a mixing bowl, whisk the eggs until light and fluffy, about 2 minutes.
Whisk in 1 cup sugar, a little at a time, then continue whisking until completely blended, about 1 minute more.
Pour in the cream and whisk until blended.
Stir in the sugared kiwis.
Transfer the mixture to an ice cream maker and freeze it according to the manufacturer’s instructions.
Makes 1 quart.
