  • Zesty Whole 30 Spaghetti Zoodles

    This fabulous dish of Spaghetti Zoodles is loaded with savory Italian herbs and seasonings, but no added sugars; It's the perfect Whole30 Compliant dish the entire family will love!
    Zesty Whole30 Spaghetti Zoodles


    Several weeks ago our family underwent the Whole30 Challenge, which we struggled with at first, trying to figure out tasty meals the entire family would enjoy. This spaghetti zoodles recipe, however, is a complete no-brainer. EVERYONE loved it and it's been requested several times since.

    You'll Need:
    2 Tbsp olive oil
    1 cup finely diced sweet onion
    1 cup finely diced carrots
    3 large cloves garlic, minced
    2 (28oz.)
    cans crushed tomatoes
    1 (6oz.) can tomato paste
    1 Tbsp dried basil
    1 Tbsp dried oregano
    1 Tbsp Himalayan Pink salt
    1/4 tsp red pepper flakes
    1 Tbsp balsamic vinegar
    1 bay leaf
    1 lb grass-fed Organic Ground Beef (or Ground turkey)
    4-6 oz fresh mushrooms, sliced

    3 Medium Zucchini (Spiralized) ** if you're not familiar with the spiralizer, it's a great little kitchen gadget that allows you to turn zucchini, squash and other veggies into "noodles" quickly and easily.





    In a large skillet over medium-high heat brown the meat until no longer pink. If there is a bit of fat in the pan omit the olive oil and Add the onion, carrots and garlic, saute until the veggies are semi-soft (4-5 minutes).

    Add the remaining ingredients, stir, reduce the heat, cover and let it simmer for 15-18 minutes, stirring occasionally.



    Add the Mushrooms, cook 1 minute. Remove the bay
    leaf.



    Add the spiralized zucchini noodles.



    Cook 4-7 minutes, until the zucchini is cooked al dente. Keep in mind that it cooks very quickly!! Season with salt and pepper to your taste preference, serve hot.

      I LOVE zoodles! It was this site that introduced me to them a little over a year ago. I recently used the wide cutter to make Scalloped Zoodles. That was pretty win. Other popular dishes at our house include Shrimp in a Lemon cream sauce over zoodles, Sage and browned butter zoodles, and various raw food recipes (I have a friend who is a raw chef). I also use the wide cutter to make lasagna. You can run cabbage, potatoes, apples, onion, just about anything through one of these.

      Whole30 sounds like a ketogenic diet, which happens to be what I'm already on. I've lost 36 lbs and counting. Easiest diet ever.

      If anyone is thinking about getting a spiralizer, I do not recommend the smaller hand held ones even though they are half the price of the ones you crank. My mother has a small one and I tried it out when I was at her place. Personal experience says it is just a pain in the tuckus. A decent spiralizer runs around $25 on Amazon. Shop around a bit, prices vary pretty widely.
