    Muffins are delicious, but who has time to make them before work or school in the morning? Well, YOU do now, with this simple make ahead blueberry muffin in a mug mix recipe.

    Blueberry Muffin Mix in a Mug- quick & easy single serve!
    Blueberry muffins are a great way to start the day, but who wants to make an entire batch on a busy weekday morning? Better yet, if you have a student off at college or coming in late in the afternoons, these are the perfect size. Avoiding gluten? No problem, check out the second recipe which offers a delicious make ahead gluten free version as well.

    You'll Need:
    ¼ cup All Purpose flour
    1 Tbsp brown sugar
    ¼ tsp baking powder
    ⅛ tsp salt
    ⅛ tsp cinnamon

    Combine flour, brown sugar, baking powder and salt, mixing well. Place this mixture in a baggie & label with the finishing directions. This makes 1 pkg of Mix.

    Single Serving Muffin Mix- fresh muffins in 2 minutes flat


    To make 1 Blueberry Muffin:

    1 Pkg of Muffin in a Mug Mix (as listed above)
    1/2 Tbs Butter
    2 Tbs Milk (or Almond Milk)
    2 Tbs. Blueberries (fresh or frozen)

    Spray a microwave safe mug with non-stick spray.

    In the prepared mug combine muffin mix, butter and milk, mixing well until just combined. Add blueberries, stir gently. Avoid overmixing to prevent the muffin from becoming tough.

    Microwave on high for 60-90 seconds. Serve with a pat of butter or drizzle of maple syrup.



    Alternative: Gluten Free Blueberry Muffin in a Mug


    ¼ cup Oat flour **
    1 Tbsp brown sugar
    ¼ tsp baking powder
    ⅛ tsp salt
    ⅛ tsp cinnamon

    (to make your own oat flour, blend quick cooking oats in a blender until finely powdered)

    Combine flour, brown sugar, baking powder and salt, mixing well. Place this mixture in a baggie & label with the finishing directions. This makes 1 pkg of Mix.

    To make 1 Blueberry Muffin:

    1 Pkg of Muffin in a Mug Mix (as listed above)
    ½ Tbsp Coconut Oil (or Butter)
    2 Tbsp Greek Vanilla Yogurt
    1-2 Tbsp frozen blueberries

    Spray a microwave safe mug with non-stick spray.

    In the prepared mug combine muffin mix, coconut oil and vanilla yogurt, mixing well until just combined. Add blueberries, stir gently. Avoid over mixing to prevent the muffin from becoming tough.

    Microwave on high for 60-90 seconds.

    Serve with a pat of butter or drizzle of maple syrup.
