Cherry-Almond White Chocolate Cheesecake Bar Mix:
2 cups flour
1/8 tsp. salt
1 cup brown sugar
1/2 cup dried cherries
1/2 cup sliced almonds
3/4 cup white chocolate pieces or vanilla chips
Cherry-Almond White Chocolate Cheesecake Bars
1 jar Cherry-Almond White Chocolate Cheesecake Bar Mix
1 cup butter, softened
1 tsp. vanilla
1 tsp. almond
FOR CREAM CHEESE TOPPING:
1 (4-oz). pkg. cream cheese, softened
1/2 cup granulated sugar
1 large egg
1 cup cherry preserves
Preheat oven to 350. Lightly grease (or spray) an 8 -inch or 9-inch square pan. Remove the bag of cherries, almonds and chips from jar; set aside.
In a medium bowl cream the brown sugar, butter, vanilla and almond extract until smooth. Add the remaining ingredients from jar (flour and salt), stirring to mix well.
Next, add the dried cherries, almonds, and white chocolate chips, stirring to ensure they're mixed in.
Press batter into prepared pan. Beat cream cheese, granulated sugar and egg in a small bowl at medium speed with an electric mixer until smooth, (mix should be thin)
Spread cream cheese mixture over batter. Heat cherry preserves in
Stir preserves to remove lumps. Drop cherry preserves over cream cheese topping. Lightly draw the blade of a knife through the topping to swirl preserves into the cream cheese mixture.
Bake at 350 for 25-30 minutes. Cool Cut into 1-1/2 x 2-inch bars. Refrigerate. Makes about 24 bars.
