There are several reasons for creating your own homemade seasoning mix aside from the fact that homemade mixes are considerably cheaper than their store-bought counterparts. I love being able to control the amount of sodium in recipes, plus avoid suspected hormone disrupting chemicals such as msg (Monosodium glutamate).
1 tablespoon corn starch
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon sugar
3/4 teaspoon crushed chicken boullon cube
1/2 teaspoon onion
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
Combine the ingredients in bowl, mixing well, then transfer to a spice jar. This makes 3 1/2 Tbs (or enough to season 3 pounds of poultry).
Use 1 slightly rounded tablespoon per pound of meat for seasoning.
To Use Seasoning Mix:
In a bowl, marinating dish or gallon size ziplock bag combine 1 pound of sliced chicken breast, 2 Tbs olive oil, and 1 slightly rounded tablespoon of Seasoning Mix. Stir to coat, let it rest while preparing the veggies.
Cut 1 large onion, 1 large red bell pepper and 1 large green bell pepper into thin strips. Heat a drizzle of olive oil in a large skillet over medium high heat, add the onions and peppers, saute until crisp-tender. Remove and keep warm. Add the seasoned chicken strips to the skillet, cooking 5-6 minutes until browned. Return the sauteed peppers and
