    I’ve made…
    mac n cheese (cheap boxes that are around 50 cents) with hamburger meat with some veggies on side
    Can soup and grilled cheese
    Can beef stew over rice. pasta or potatoes
    mac n cheese with can tuna
    Hamburger meat, rice and shredded or slice cheese

    Italian Potatoes

    This is very simple. I take 4-6 Large potatoes or more depending on how much you want. Then I peel and cube them in little cubes. Put them in a baking dish. I take a bottle of Italian dressing and pour over them until all the potatoes are just covered. Then I baked them at 350 for a 45- a hr depending on your stove. (my stove takes 45 but my MIL’s takes about an hour.) Pretty simple and VERY yummy.

    For the Enchiladas: ( my brother doubles the recipe to make more but this is gogod for my family of 3 )

    1lbs Beef
    1 pk taco seasoning ( only use 1/2 a pk)
    1pk Cheddar cheese
    1 can refried beans
    1 can enchilada sauce

    Brown meat and drain. Add 1/2 pk cheese, 1/2 taco seasoning, and beans. Stir well over heat until well melted. Take tortilla and fill with mixture. Roll up and spoon enchilada sauce on top then top with remaining cheese. Bake in over just long enough for cheese to melt.
    These are very good. Sometimes I throw in a salad. My husband tops his with sour cream.

    I’ve very sorry you are going through this. I’ve been there and I know how difficult it can be. Especially if you’ve been with someone a long time.

    When me and my husband and a period of separation a while back I found some yahoo groups that we’re very helpful. Go to yahoo and search for support groups. Let me know if there is anything I can do.
