      Zucchini and Tomatoes
      1/4 cup lemon juice
      1 tsp ground cumin
      3/4 tsp salt
      1/2 tsp black pepper
      1/8 tsp cayenne pepper
      1/4 cup extra-virgin olive oil
      2 cups cherry or grape tomatoes, halved
      2 cups leftover cooked zucchini
      1/3 cup toasted pine nuts or toasted whole almonds, coarsely chopped
      Whisk lemon juice, cumin, salt, black pepper and cayenne pepper in medium bowl. Slowly whisk in oil. Add tomatoes.

      Toss to coat.
      Arrange zucchini on serving platter.
      Spoon tomatoes and vinaigrette over zucchini. Let stand 15 minutes to let zucchini absorb flavors. Sprinkle with pine nuts.

      Serves 6
