For those of you that are baking, sometimes you see in a recipe add the zest of 1 lemon, or the zest of 2 lemons- but you might be wondering- how much is the zest of a lemon???
One lemon yields approximately 1 tablespoon of zest. For each teaspoon of lemon zest called for, you substitute 1/2 teaspoon lemon extract, so for the zest of one lemon, substitute 1 1/2 teaspoons of lemon extract.
