This is an easy and versatile recipe for a delicious soup. Add some crusty bread and you’ve got a great meal for a crisp fall day.
Ingredients: 1 package frozen breakfast sausage 1/2 cup onion 1 garlic clove 1 tablespoon italian seasoning ( or whatever seasoning you prefer) 1 cup fresh mushrooms 1 can pumpkin 4 cups chicken broth 1/2 cup cream 1/2 cup water
Brown sausage, then add onion, garlic, mushrooms and seasonings and saute until done. Add pumpkin and mix well. Stir in broth and simmer 20 -30 minutes. Stir in cream and water and simmer on low another 10 – 15 minutes. Add salt, pepper or other seasonings to taste.
