YUmmm Spinach Pesto

      Cram 4 cups spinach into the food processor.
      Chop an entire head of garlic and saute’ in 1/2 cup olive oil.
      Dump a small jar of pine nuts over the spinach. Process until medium pieces. Pour the hot olive oil and garlic over the top and pulse until mixed.
      Dump into a bowl and add 1 cup shredded parmsian cheese.

      Stir. Add more oil if necessary.
