Your Veggies
Take all your leftover veggies in separate containers and mix together for the next recipe. It doesn’t matter how you prepared them — unless it’s corn on the cob, then you might want to cut the corn off;-)
Veggie Salad Wrap
flour tortillas, number depends on how many servings you’re making
reserved veggies
shredded cheese
shredded lettuce
shredded carrots
1 tbs creamy-style salad dressing
Heat a tortilla in the microwave for 10 seconds. Place 3 tbs mixed veggies in the the center of tortilla. Heat in microwave for 1/2-1 minute (depends on the veggies).
Sprinkle some shredded cheese, add lettuce, carrots, and dressing. Wrap and eat!
this is great for lunches or those nights that you’re in a rush!
