      Your Rice
      Fix it however you feel like fixing it (can you tell I’m from the South?) and make a double batch so you can have 2 cups leftover for the next recipe;-)

      Black Bean and Rice Salad:084:
      1 1/2 tsp salt
      1 clove garlic, crushed
      1 bay leaf, crushed
      2 tsp chili powder
      2 tsp cumin seed
      2 tsp thyme
      2 cups reserved rice
      2 cans (15 oz) black beans, rinsed and drained
      1 small red bell pepper, diced
      1 jalapeno pepper, seeded and diced
      1 oz cilantro, chopped
      1 tsp yellow mustard
      1 tbs red wine vinegar
      2 tbs olive oil
      2 tsp chili powder
      2 tsp red pepper sauce
      1 clove garlic, crushed
      1 tsp black pepper
      Combine all ingredients in a large bowl. Chill and serve. 8 servings = about 205 calories.
