Your Rice
Make your rice…but not too seasoned…and save the leftovers for the next recipe!Apple Rice Curry:bounce:
1-1/2 cups long-grain brown rice, cooked
1 cup apple juice
1/2 cup raisins
2 tbs vegetable oil
1/2 cup onion, chopped
2 tsp curry powder
1/2 tsp black pepper
1 yellow delicious apple, peeled, cored and chopped
Heat brown rice, apple juice and raisins with a dash of salt in a heavy saucepan over medium-low heat. Heat oil in a heavy nonstick pan over medium heat. Add next 3 ingredients and sauté 5-7 minutes, or until onion is soft. Stir in apple and sauté 3 minutes. Stir in cooked rice, raisins and salt to taste. Cook until hot. Remove from heat, cover and set aside about 2 minutes before serving. 4 servings = about 265 calories. - March 22, 2009 at 12:48 am #418050
