Yao Guo Jiding (Cashew Chicken)
or
Gong Bao Jiding (Peanut Chicken)This recipe was given to me by a friend of mine who lives in China!
A – Marinade:
2 tsp soy sauce
2 tsp red wine or cooking wine
1 tsp corn starch
1/4 tsp salt
1 lb chicken, dicedB – 1/2 cup cashews (or peanuts)
3 Tbs oilC – 1 carrot, diced
1 red pepper, dicedD – 2-3 dried chiles, cut into small pieces
2-3 cloves garlic, minced
a little sliced gingerE – 3 scallions, diced
Marinate chicken in the “A” ingredients for at least 1/2 hour. Stir fry the nuts in hot oil for several minutes, until lightly browned, then remove from oil. Stir fry carrots in the oil for about 5 minutes, until tender, then remove them from the skillet.
Stir fry the “D” ingredients for 20-30 seconds to release their aroma. Then, add chicken & stir fry for several more minutes, until chicken is brown & cooked through. Add all other (cooked & raw) ingredients.
Stir fry another minute, then serve.
For an “authentic chinese meal,” this really doesn’t have many ingredients that you wouldn’t normally find in the pantry or fridge.
