I saw this recipe & thought it would be a new way to use yams in the holiday meal! 🙂
1 (15oz) can sweet potatoes (yams), drained & mashed
4 cups biscuit baking mix
1/2 tsp ground cinnamon
3/4 cup skim milk
3 Tbs margarine, softened
Preheat oven to 450.
In mixing bowl, mix yams with baking mix & cinnamon. Add milk & margarine, stirring until blended. Roll on a floured surface to 1 inch thickness.
Cut with 2 inch cutter or glass, & place on ungreased baking sheet. Bake for 10-12 minutes, or until golden brown. Serve hot.
Makes 20-24 biscuits
