Wild Rice and Mushrooms
1 pkg Uncle Ben’s Long Grain and Wild Rice
1/4 olive oil
1 onion, chopped
3 cloves garlic minced
1 cup sliced mushrooms
3 stalks celery, chopped (it’s okay to include the leaves)
3 tsp parsley*
3 tsp sage*
3 tsp rosemary*
3 tsp thyme*
salt and pepper to taste
Prepare rice according to package directions. Heat oil in large skillet. Saute onions until translucent then add garlic, mushrooms and celery. Cook and stir over medium-high heat for about 3 minutes. Add remaining ingredients, stirring while cooking for a few minutes more. Stir in the cooked rice, remove from heat, add salt and pepper as needed. Once seasoned and mixed well, serve! Makes 4 heaping servings.
*Note: if using fresh herbs, reduce by half.
Fabulous with or without gravy!
