Whole Grain Raised Donuts
1 package dry yeast (1 Tablespoon)
1/4 cup warm water (105 to 115 degrees F)
3/4 cup lukewarm milk Scalded than cooled)
1/4 cup sweetener(sugar, honey, condensed apple juice)
1 teaspoon salt
1 egg
1/4 cup fat (shortening, butter,ect)
1/4 cup gluten
3 1/2 cup to 3 3/4 cup flour of your choiceI grind my own flour for everything. For white flour I grind equal amounts of Barley, Oat groats and Brown rice. Can’t use this for yeast bread without adding lots of gluten.
To make donuts:
Dissolve yeast in warm water. Stir in milk, sweetener, salt, egg, fat, gluten and 2 cups flour. Beat until smooth.Mix in enough remaining flour to make dough easy to handle.
Punch down dough; let rise again until almost double, about 30 minutes.
Roll dough 3/8 inch thick on lightly floured surface. Cut dough with floured donut cutter. Let rise until doubled and very light, 30 to 45 minutes (leave uncovered so crust will form on dough)
Fry 2 or 3 minutes or until golden brown on both sides.
Carefully remove from grease. Do not prick the surface. Drain.
To sugar: Roll warm donuts in granulated sugar or cinnamon sugar or shake donuts up in a paper bag with powdered sugar.
To glaze: Blend together 1/3 cup boiling water into 1 cup confectioner’s sugar. Dip warm donuts into warm glaze.
Chocolate glaze: Melt 2 oz. unsweetened chocolate and 3 Tablespoons butter together. Stir in 1 cup of confectioners sugar and 3/4 teaspoon vanilla.
Mix in hot water 1 teaspoon at a time until glaze is of proper consistency.
