      Whole Grain Raised Donuts
      1 package dry yeast (1 Tablespoon)
      1/4 cup warm water (105 to 115 degrees F)
      3/4 cup lukewarm milk Scalded than cooled)
      1/4 cup sweetener(sugar, honey, condensed apple juice)
      1 teaspoon salt
      1 egg
      1/4 cup fat (shortening, butter,ect)
      1/4 cup gluten
      3 1/2 cup to 3 3/4 cup flour of your choice

      I grind my own flour for everything. For white flour I grind equal amounts of Barley, Oat groats and Brown rice. Can’t use this for yeast bread without adding lots of gluten.

      I grind 1/3 7 grain mix and 2/3 hard winter wheat ground together for yeasted breads.

      To make donuts:
      Dissolve yeast in warm water. Stir in milk, sweetener, salt, egg, fat, gluten and 2 cups flour. Beat until smooth.

      Mix in enough remaining flour to make dough easy to handle.

      Turn dough onto lightly floured surface and knead until smooth and elastic, about 5 minutes. Place in a greased bowl; turn greased side up, cover; let rise in a warm place until double, about 1 1/2 hours.

      Punch down dough; let rise again until almost double, about 30 minutes.

      Roll dough 3/8 inch thick on lightly floured surface. Cut dough with floured donut cutter. Let rise until doubled and very light, 30 to 45 minutes (leave uncovered so crust will form on dough)

      Heat fat or oil (3 to 4 inches) to 375 degrees in deep fat fryer or kettle. Drop donuts into hot grease. Turn donuts as they rise to surface.

      Fry 2 or 3 minutes or until golden brown on both sides.

      Carefully remove from grease. Do not prick the surface. Drain.

      While warm roll donuts in sugar or if desired frost or glaze.

      To sugar: Roll warm donuts in granulated sugar or cinnamon sugar or shake donuts up in a paper bag with powdered sugar.

      To glaze: Blend together 1/3 cup boiling water into 1 cup confectioner’s sugar. Dip warm donuts into warm glaze.

      To garnish: Sprinkle glazed donuts wih chopped nuts, cononut, colored sugar or confetti candy topping.

      Chocolate glaze: Melt 2 oz. unsweetened chocolate and 3 Tablespoons butter together. Stir in 1 cup of confectioners sugar and 3/4 teaspoon vanilla.

      Mix in hot water 1 teaspoon at a time until glaze is of proper consistency.

      Ok, I wouldn’t call this fast or easy but about once a quarter we’ll have a special breakfast with raised donuts, usually one of those mornings Mom wakes up at 4 am and can get it started before any one else is up. One of those fun special breakfast things!
