I’m a stylist in a salon. Fridays are usually a pretty busy day for us. In the winter (to make life easier) we have “soup fridays”.
We take turns signing up for a soup to bring and a dessert. This is one of our favorites.
1 med onion, chopped
2 cloves garlic, minced
1 Tbs olive oil
4 cooked, boneless, skinless, chicken breasts, chopped
2 cans (14 oz each) chicken broth
1 can (4 oz) chopped green chilies
2 tsp ground cumin
2 tsp dried oregano
1 tsp cayenne pepper
3 cans (14 oz each) great northern beans, drained
1 cup montery jack cheeseIn a large saucepan over medium heat. cook the onions and garlic in oil for 10 minutes or until onions are tender. Add chicken, chicken broth, green chilies, cumin, oregano and cayenne pepper; bring to a boil.
Reduce heat to low. with a potato masher, mash one can of beans until smooth. Add to saucepan.
Add remaining beans to saucepan. Simmer for 20-30 minutes or until heated through. Top each serving with cheese if desired
Makes 8 servings.
