    Neufchatel (pronounced “new-shuh-TELL) is often used in place of cream cheese in recipes. It has a taste & texture very similar to cream cheese but it’s actually made from milk, rather than cream. Therefor it contains considerably less fat and moisture.

    Because of this fact, it has a tendency to cook more quickly in recipes and if used in cheesecake recipes- has a tendency to crack.

    I may try this the next time I make a cheesecake since mine always crack anyway.
