Waffles with Blueberries
1/2 cup whole-wheat flour
1/2 cup all-purpose flour
1 tbs sugar
1 tsp baking powder
1/4 tsp salt
1 cup skim milk
1 egg, lightly beaten
2 tbs canola oil
1/2 cup fresh blueberries
First, heat the waffle iron. Spraying the iron with a bit of cooking spray helps to make clean up quite a bit easier.
Next, in a large bowl, combine the whole-wheat flour, all-purpose flour, sugar, baking powder, and salt. Gently stir the dry ingredients together until they are well combined. Next, make a well in the center of the flour mixture.
In a separate smaller bowl, mix together the milk, egg, and oil. Stir with a whisk until the mixture is well combined.
Pour the wet ingredient mixture into the middle of the well in the dry ingredients and gently stir all the ingredients together. Finally, gently fold in the blueberries using a large spoon.
Once the waffle iron is heated, pour about 1/4 cup of the batter into each compartment of the waffle iron. Cook until waffles are lightly browned and crisp timing them according to specific waffle iron’s directions.
Serve warm with blueberry syrup if desired. Makes 6 waffles
