Vegetarian Potato Patties
leftover mashed potatoes (1/2 cup per pattie)
mixed frozen vegetables carrot, corn, peas, etc.
cilantro
chili powder, to taste
salt, to taste
lemon juice
2 tbs diced onion
bread crumbs
Mix vegetables, cilantro, onion, chili powder, salt, lemon juice. Use bread crumbs or pieces of bread to help the mixture bind together and make patties.
Spray a pan with non-stick cooking spray and heat your vegan patties till they turn a little brown on each side. Servings as supply of mashed potatoes (and added ingredients) will suffice. (This is kind of a ‘wing it’ recipe…it all depends on the amount of mashed potatoes. You can make a single serving or a dozen! LOL!)
