Vegetable Lasagna
Prepare as you normally would with red or white sauce. Refrigerate (of course! LOL!) leftovers.
Vegetable Noodle Soup
Take cold, leftover lasagna and slice in strips across the width of the pasta. Place in a pot with 2 cups vegetable broth and bring just to a boil, stirring frequently. :!:Reduce heat and check for desired consistency — some people like their soups a little thick — and thicken as desired.
Serve with crusty bread and enjoy!
