This is a wee bit different from my other recipe and is a two-step dump receipe!Vegetable Beef Soup II
1 lb extra-lean ground beef
1 tbs olive oil
1 cup chopped onion
1/2 cup chopped celery
10 1/2-oz can condensed French onion soup
10 1/2-oz can condensed beef broth
1 cup water
14.5-oz can Rotel (your choice of type)
1 1/2 to 2 cups frozen mixed vegetables
In a large skillet, sauté the ground beef in olive oil with onion and celery until beef is no longer pink.
Transfer the beef and onion mixture to a 4 to 6 quart slow cooker. Add onion soup, beef broth, water, and tomatoes.
Cover and cook on low for 4 to 6 hours.
Add frozen mixed vegetables. Continue cooking on low for 30 to 45 minutes, until vegetables are tender. Serves 4 to 6.
