      Steak House Seasoning:
(This can be used for nearly every meat, fish and poultry)

      Original Recipe:

      3lb box Kosher Salt
      1lb onion powder
      1lb garlic salt
      1lb celery salt
      1lb paprika
      1lb pepper
      1lb sugar
      1/2 lb nutmeg

      (For home use)

6 Tbsp Kosher Salt (Or Sea Salt)
      2 Tbsp onion powder
      2 Tbsp garlic salt
      2 Tbsp celery salt
      2 Tbsp paprika
      2 Tbsp pepper
      2 Tbsp sugar
      1 Tbsp nutmeg

(Changes I make: I use powder when it comes to the garlic and celery seed (1 Tbsp) rather than using the kind with salt as there is plenty salt already! However, keep in mind this is a seasoning, so you aren’t using a huge amount. I have used this as a ‘light’ rub for chicken and it turns out great.)

‘Essence’: (A little on the spicy side, but delish on a prime rib.)

      2 1/2 Tbsp Paprika
      2 Tbsp Salt
      2 Tbsp Garlic Powder
      1 Tbsp Pepper
      1 Tbsp Onion Powder
1tsp to 1 Tbsp Cayenne Pepper (Depending on how spicy you like things)
      1 Tbsp Oregano
      1 Tbsp Thyme

I only use this for special meats and tender cuts that are roasts. This is usually used as a rub. (Least this is how I use it.)

      Taco or Chili Seasoning:

      2 1/2 Tbsp Chili powder
      1 1/2 Tbsp Paprika
      2 Tbsp Cumin
1 1/2 Tbsp Dried minced or Onion Flakes (or 1 Tbsp Onion Powder)
      1 Tbsp Garlic Powder
      2tsp Oregano
      1/2tsp Cayenne Pepper
      1tsp salt

Use 2-4 Tbsp (depending on taste) of mix per 1 lb of ground beef used.

Pork Seasoning run: I use this on Roasts and Pork Ribs

      2 tsp sugar
      2 tsp paprika
      1 tsp garlic powder
      1 tsp ground pepper
      1/2 tsp chilli powder
      1/2 tsp ground cumin
      1/2 tsp ground coriander

Season meat generously. Sear meats. (Brown in the oven 15 minutes, turning half way on highest heat possible) Reduce temperature to 350 and bake until done.

      (145 internal temp)
