This is my favorite quick appetizer. We had a lovely Italian couple over for dinner one night and they brought this dish and a dessert. I quickly asked for the recipes for both dishes as they were fabulous.
The ingredients are not exact…just kind of eyeball it. This is a similar dish to brushetta.Crostoni:
.
Ingredients:– Mozzarella Cheese-Slices, shredded, or chunks
– French Bread-Sliced
– Tomatoes-Chopped into chunks
– Olive Oil
– Salt, pepper and oreganoPreparation:– Place sliced French bread on cookie sheet and put in the oven (~375F) until it gets a bit crispy.
– Chop tomatoes into small chunks and mix them in a small bowl with olive oil, salt, pepper and oregano to taste or as you like it.
– Put the tomatoes mix on the French bread and top with some mozzarella cheese. Put it in the oven (~375F) again until the cheese melts.
