I made this for Thanksgiving, and it was a big hit. I got the recipe from last month’s issue of Hallmark Magazine.
Turtle Pumpkin Pie
1/4 c. plus 2 Tbsp. caramel ice cream topping, divided
2 graham cracker crusts
plus 2 Tbsp. pecan pieces, divided
1 c. cold milk
2 packages (3.4 oz.
each) Jell-o vanilla instant pudding
1 c. canned pumpkin
1 tsp. ground cinnamon
1 tub (8oz.) Cool Whip, thawed, divided
Pour 1/4 c. caramel topping into crust; sprinkle with 1/2 c. pecans
Beat milk, pudding mixes, pumpkin and spices with whisk until blended. Stir in 1 1/2 c. Cool Whip.
Spread into crust.
Refrigerate at least 1 hour. Top with remaining Cool Whip, caramel topping, and pecans just before serving. Makes 10 servings
*The original recipe only called for 1 crust, but when I made it I had more than enough to make 2 pies. I just put the spare in the fridge, to make a pie later.

Just reading this delicious sounding recipe put 10 pounds on me! LOL
