Hot? Stressed? Short on time? Pick up some cucumber tomato salad from
your deli counter. Stretch it with a few on hand ingredients and presto
a scrumptious summer supper in mins.
Grilled Chicken Panzanella Salad: Prepare grill for direct heat cooking.
Place 1 pound boneless chicken breast halves in shallow dish. Coat with
1/4 caesar style vinaigrette. Let stand 20 mins. Grill chicken over
direct heat and turning once until no longer pink in center, About 6
mins per side. Cool slightly cut into 1/ inch thick slices. Meanwhile
bake 1/2 loaf frozen mozzarella garlic bread according to pkg
directions. Cool and cut into 1 inch cubes. In a large bowl combine 1
pound prepared deli cucumber tomato salad, 1 cup torn loosely packed
fresh basil leaves, chicken and bread cubes. Toss with 1/2 cup caesar
style vinaigrette. Makes 4 servings
Pierogi Salad with Broccoli: Saute 1 pkg frozen potato and cheddar
pierogis according to pkg directions. Cool. Meanwhile in a large bowl
toss 3 cups cooked broccoli florets, 1 pound prepared cucumber tomato
salad and 2 Tablespoons ranch dressing. Place pierogis on platter. Top
with broccoli mixture. Drizzle with 3 Tablespoons ranch dressing.
Sprinkle with 2 slices crumbled cooked bacon. Makes 4 servings
Zesty Greek Salad: In a large bowl toss 5 cups torn mixed lettuce such
as 1 pkg 10oz Italian salad mix with 1/4 cup red wine vinaigrette. Place
on sering platter. Arrange 1 1/2 pounds prepared deli cucumber tomato
salad, 2oz feta cheese broken into chunks, 8 stuffed grape leaves and 1
yellow pepper cut into strips. Drizzle with 1 Tablespoon red wine
vinaigrette. Makes 4 servings
