ParticipantA friend, that loves to cook and tries to duplicate great meals at restaurants, sent this recipe to me and said that I could share. Best of all, she figured out how to make it in the crockpot making it even easier! LOL!
Tupinamba’s Sausage Chili
3 tbs vegetable oil
2 yellow onions, diced
1 red bell pepper, diced
6 garlic cloves, finely chopped
1/4 cup chili powder
1 tbs ground cumin
2 lbs pork sausage
1 1/2 tsp salt
28-oz can diced tomatoes
14-oz can tomato sauce
2 15-oz cans kidney beans, drained and rinsed
cilantro, garnish
Saute bell peppers and onion in oil on medium heat in a large skillet.
Season with salt and cook for 8 minutes or until tender.
Now add in garlic, chili powder, and cumin and mix well for about a minute.
Add in sausage and cook until heated through.
Put the skillet contents in a slow cooker and add in tomatoes, tomato sauce, and beans.
Mix well and cook for 8 hours on low or 6 hours on high.
