Tuna-Stuffed Avocado
6-oz low-fat cream cheese
¼ C. Greek yogurt
2 rbs onion, finely chopped
juice from 1/2 lemon
1 tsp. celery seed
½ tsp pepper
16-oz.
can tuna, drained and flaked
4 med avocados
pinch paprika
Slice avocados in half length-wise. Remove the pit. Cube the avocado from half of each avocado so there are 4 avocado halves still intact.
Place cubed avocado into a medium bowl.
In a small bowl combine cream cheese and Greek yogurt. Add the cream cheese mixture to the avocados. Add onion, lemon juice, celery seeds and pepper.
Carefully stir in tuna to combine.
Spoon ¼ of the tuna salad into one avocado. Repeat with the remaining three avocado halves. Top with a light dusting of paprika and serve.
