Tuna Soft Tacos
Makes 6 Servings
INGREDIENTS:
1/3 cup mayonnaise
1/2 teaspoon garlic salt
1/2 teaspoon lemon pepper seasoning
1 can (6 oz.) Solid White or Chunk Light Tuna, drained and flaked
1/4 cup chopped celery
1 hard-cooked egg chopped
2 tablespoons tablespoons finely chopped green onions, including tops
1/4 cup diced green or red bell peppers
6 Soft taco size flour tortillas, warmed
1 cup shredded iceberg lettuce
1/2 cup shredded Colby or Monterey Jack cheese
SalsaDIRECTIONS:
In a large bowl, combine mayonnaise, garlic salt, lemon pepper seasoning, tuna, celery, egg, onion, bell pepper mix thoroughly. Place generous 1/4 cup filling on one side of each tortilla top with lettuce and cheese. Fold tortilla over serve with salsa, if desired. - December 2, 2008 at 10:23 am #405064
