      Note the date of this posting — we’re in lock-down, we can only travel for essential services, we cannot gather in groups larger than 10, and the media is expressing gloom and doom.  Let’s create a happier time with the people that we are ‘trapped with.’  I mean that affectionately, although sometimes I want to strangle him! LOL!  Plan a backyard camping trip and do things like you would or just plan a picnic!  This simple recipe and anything you want to have on the side, might bring a smile.  Have fun with your family and be safe.  Most importantly, resist the urge to strangle your partner when he/she moans about the situation!  …Giggle…

      Tuna Salad for Sandwiches

      For Tuna Salad:
      7-oz can tuna, preferably white tuna in water
      1 to 2 ribs celery
      1 hard-boiled egg
      3 tbs mayonnaise, or more, as needed
      1 tbs dill pickle, finely chopped, or dill relish or 1 to 2 tsp chopped dill
      Salt, to taste
      Pepper, to taste
      Optional: 1 to 2 tbs onion, finely chopped

      To Assemble Sandwich:

      6 to 8 slices bread or 3 to 4 sandwich rolls or buns, split
      Optional: lettuce leaves
      Optional: sliced tomato
      Drain the tuna.

      Transfer the tuna to a medium bowl and flake it with a fork.

      Finely chop the celery and hard-boiled egg and add them to the tuna along with the mayonnaise, and chopped dill pickle. If desired, add 1 or 2 tbs of finely chopped onion, chopped parsley, or Dijon mustard.

      Taste and add salt and pepper, as needed, and more mayonnaise, if desired.

      Toast or grill the bread or rolls, if desired.

      Line the bread or rolls with lettuce leaves and spread the tuna salad on the lettuce. Add a slice or two of thinly sliced tomato, if desired.

      Serve the tuna sandwiches with sliced dill pickles and potato chips or French fries.  Makes 3-4 sandwiches
